Study Finds Mycotoxins in Plant-Based Foods, Raising Food Safety Concerns

A recent UK study has revealed the presence of mycotoxins—naturally occurring toxins produced by fungi—in a wide range of plant-based foods, prompting questions about food safety as these products grow in popularity.

The research analyzed 212 plant-based items, including meat alternatives like burgers and sausages, as well as plant-based drinks made from oats, soy, and other ingredients. Every product tested contained at least one of the 19 mycotoxins screened.

  • Plant-based meat alternatives exhibited higher concentrations of mycotoxins compared to plant-based beverages.
  • More than 90% of meat alternative products contained certain emerging mycotoxins.
  • Multiple mycotoxins often co-occurred within the same product, increasing potential consumer exposure.

Mycotoxins develop in crops such as grains, maize, beans, and seeds when conditions favor fungal growth during cultivation, harvesting, or storage. Since these crops are common ingredients in plant-based foods, contamination can carry over into finished products.

Although the study found mycotoxins in all tested items, the levels were generally below European Union safety limits for related food categories. Researchers emphasized that this does not indicate plant-based foods are unsafe but highlights the need for improved monitoring and research on long-term health implications.

Implications for Food Safety

Current food safety regulations often focus on individual raw commodities rather than the complex mixtures found in processed plant-based products. This complexity, coupled with repeated use of similar ingredients across products, may lead to cumulative mycotoxin exposure in consumers.

Some mycotoxins are associated with adverse health effects affecting the liver, kidneys, and immune system, and some have carcinogenic potential. However, the risk depends on specific toxin types, exposure levels, and frequency.

  • Enhanced monitoring of raw materials and finished products for mycotoxin contamination.
  • Proper storage practices to prevent fungal growth.
  • Incorporation of mycotoxin control measures within broader food safety systems.
  • Further studies to clarify health risks from regular consumption of plant-based foods.

With a growing number of consumers adopting vegetarian, vegan, or flexitarian diets, understanding and managing these risks is increasingly critical to ensuring food safety.
